        <content>Want to revive this thread as I order my small allotment of Parmigiano Reggiano Vacche Rosse.  It just has an amazing flavor.  When I first tried it I thought 'aha - this is what parm reg tastes like' .  As if I took off my sunglasses in a dark room and said 'now I see'.  While I'm as huge advocate of a basic parm reg and use it liberally, it does pale in comparison.  

Buy a bit when you want to splurg (and if you're a cheese lover!).

      <content>Love it, love it , love it......... i found the same with Prosciutto San Daniele, as opposed to the Prosciutto di Parma.  There is nothing like a big hunk of GOOD Parm. to grate over almost any dish... i love snacking on the shards as well.</content>

      <content>Depending on where you are from, most authentic Italian Salumeria's will probably carry it.  The stuff is worth hunting for.</content>
