Leftover pot roast; Ground beef, pork or turkey; pork roast, or even chicken. What to make next?
Well this goes back to a dish I had once with a friend from Germany. It is basically a giant like 3-4 inch potato dumpling that was filled with a mixture of meat and vegetables. He happened to roast the meat that day, shredded it, then slow sauteed onions, celery, carrots, herbs, and garlic. He added the the vegetables to some of the beef and added some tomato sauce, just to give it some moisture. He then made a standard potato dumpling rolled it in his palm about 3 inches in diameter poked a hole in it stuffed it with the meat filling, added some more potato and rolled it to make a nice ball. He then at a low boil to a simmer cooked the potatoes until they slightly set about 30 minutes. He served them with a great gravy made with the drippings and german red cabbage. What a treat. Well since then I have made this dish and I love it. I have used ground turkey, leftover meat from spaghetti (before I add the sauce), left over pork roast, beef roast, pulled pork, some times added cheese, they are a lot of fun.
A second option to this same dish can be made with leftover mashed potatoes and stuffed with again any meat filling or cheese, but the mashed is not as dense and does need to be rolled in bread crumbs and either pan fried or deep fried. Equally as good. A fun way to use leftovers.

ALSO: This is my recipe for my dumplings if interested. Again stuff with your favorite meat mixture. Any combination works
6 medium size potatoes boiled skin on; 2/3 cup flour; 2 eggs beaten; salt and pepper; 1/2 teaspoon nutmeg
Filling: Meat ground or shredded, your favorite veggies, carrots, celery, onion, mushrooms, a little tomato sauce just a teaspoon or so to add a bit of moisture or gravy is fine too.
Make the dumpling roll, stuff and re roll and then simmer slowly. I like to simmer in chicken broth, but not necessary. Serve with gravy.

So CHOWHOUNDS Do you have an interesting dish or something unique that you use for leftovers? Pot Roast, Pork Roast, ground meats, etc? I have some left over ground round, with veggies no sauce that I would love to make something different other than the typical.
But more interested what some of your unique dishes are?

My mom used to slice leftover roast meats and save the gravies/juices, mix up more gravy if necessary, add some steamed peas and green beans, maybe a carrot or two, stick it in a casserole and top with mashed potatoes, stick it in the oven and bake until hot through and the potates are browned on the tips.

I think that's called Shepherd's pie. I make that with leftover roast & gravy as well.
For a l-o pork shoulder roast, I shred it and put in the convection oven to dry & crisp it up, then serve it as carnitas.
LO ground meat gets spiced with taco seasonings & frozen. But I usually cook it all at once and freeze half, since raw ground meat doesn't keep very long at all. And I split packages of fresh ground pork & veal, then wrap & freeze in bags for the next meatball or meatloaf dinner.

In this "economical age" I go back to my student days where we would keep bits of leftover meat in the freezer, take it out and mince it all, whatever it is, throw is some veggies and some rice. Along with some bread , salad, and maybe a few squirts of hot sauce, it gets you through several days!

All of the above go into my chili pot, I just save them up until I have a gallon ZIploc bag full. Also including cold cuts that didn't get used by week's end. And if it's "leftover use-up chili" I have no problem with throwing some vegetables in there too (favorite: little cocktail onions, finish the jar so I can get a new one). Unique, I don't know, but that's what goes over around here.
