Ricotta Salata (salted ricotta)

Any suggestions for a cheese similar to Ricotta Salata, but has to be kosher. Thank you

    You could try draining regular ricotta cheese to a denser, crumblier texture, then salting it.

      ...and then letting it sit for 3 months in your cellar. :-)

      I think there are a couple with microbial rennet but I don't think I've ever seen kosher. As suggested, try salted farmer cheese. Feta is too dry and too salty, imo.

        I didn't say it was an excellent replacement, but it's probably no further off than feta.

          I wasn't criticizing at all. I was actually saying that's how the process could be completed.
