Best pastries/desserts/sweets in Las Vegas

I realize this is probably a bit more subjective of a question than most, but what are the best desserts in Las Vegas on the Strip, near the convention center and near the Hard Rock? My favorite in the past has been the krafen at Tintoretto's in the Venetian. I also tried something I liked at a place in Mandalay Bay but that was so long ago, I've forgotten the details. I don't mind paying for a great dessert. Thanks for any suggestions. I'm not going until April so I won't be able to post an update until then.

I was looking more for specific desserts at specific places, like the appetizer crawl post. But I will definitely check out those places.

On the Strip, for croissant-type pastries (including sweet versions), I'd go with Bouchon (Venetian) or Payard. For the very sweet, very fancy, very rich and creamy type, I'd go with Jean-Philippe (Bellagio) or Lenotre (Paris).

My bet would be Payard Pâtisserie at Caesar's. I have enjoyed it there way to many times.
