Where to find Preservative Free Lard & Beef Tallow

  • 7

Looking to find preservative free beef tallow and preservative free lard at the same location if possible. It's important that the products are BHA and BHT free. Does anyone have any suggestions?

  1. saw something somewhere about a lady who sells lard in preserving jars at the new Green Barn Farmers Market. I would think she is a small supplier and doesn't do preservatives, check it out.

    1. What are you doing with it?

        Smoke Point Flavor Testing.

Peter Duffin of Bison Basics (http://www.bisonbasics.com) has been testing the smoke point of canola, olive, ghee, and coconut oils and the resulting taste when cooking grass-fed meats. The interim results were recently published in a newsletter put out by Nina Planck (http://www.ninaplanck.com). Reader comments have asked for similar tests to be made on lard and beef tallow. I'm helping him source the products for his research.

      2. The Healthy Butcher sells lard, beef tallow and chicken schmaltz.

Asked Mario at Healthy Butcher if he carries beef tallow, I'm pretty sure he has preservative free lard. Waiting to hear back.

Mario, from Healthy Butcher, has confirmed that they have preservative-free lard and beef tallow in stock. I'll probably pick it up from them for ease of supply. As Danybear suggested, I will make time to visit the Green Barn Market to see what's available there, but it's not easy to fit their limited hours of operation into my schedule.

            Thanks for all replies...

For future reference, the Green Barn Farmers' Market will be extending their opening hours beginning May 9th. The new hours will be on Saturdays from 7:30 AM to 1:30 PM. I recently asked the market manager about their summer hours, given that many of the vendors are at both the Green Barn and Brick Works markets. This will enable vendors to set up at the Green Barn, leave someone in charge, and head to the Brick Works to set up there.
