COCONUT SHRIMP

For some reason I'm having trouble thinking of a way to make a dinner with coconut breaded shrimp as the "main" of the meal. What would go well with as the accompaniments? Can't think today.

Also, I've read about orange marmalade and horseradish dipping sauce on this site. Does anyone have the proportions? I would think a little vinegar would be used as well.

      you could serve the coconut shrimp over brown rice and serve broccolini on the side if you are trying to stay healthy with your theme. Otherwise I would recommend fried plantains for a side... yum...

        Marmalade Dipping Sauce is my favorite dip for coconut shrimp.
        1/2 cup orange marmalade
        2 teaspoons mustard (with whole grain mustard seed)
        1 teaspoon prepared horseradish

        Sides: How about pineapple rice, some kind of slaw??

          If your deep frying the shrimp....consider a take on Japanese Tempura and deep fry an assortment of vegetables ,e.g.

          broccoli, sweet potatoes, carrots, onions, string beans, scallions, eggplant, zucchini and acorn squash.

          Serve with a fresh crisp salad with Ginger dressing.

                Thanks, I edited the orignal post and added a dipping sauce question.
                Any ideas?

                  For a dipping sauce.....as far as I can recall, Coconut Shrimp was traditionally accompanied with a Plum Sauce. I would imagine any of the following would work well too:

                  Sweet and Sour / Duck Sauce
                  Apricot
                  Orange or other Marmalade
                  Mustard/Honey Mustard

                  Other ideas I would consider are:

                  A Thai inspired mango and papaya salad
                  A mango and pineapple salsa/relish
                  Some type of salad with citrus segments (blood oranges, tangerines, clementines or grapefruit)
                  Anything with Asian Pear, Lychees or Logan added.

                  When making the dipping sauces....first add any other items to your fruit base, e.g. , horseradish to your orange marmalade. Give it a good stir or mix and check for consistency. If you would like it thinner, add your idea of vinegar...or something like water, honey , apple sauce or simple syrup to thin it out to your desired preference.
