I got this clue from another person in Chowhound, but it wasn't specifically for Beaumont (it was for southeast TX).

Go to Richard's, 1085 Magnolia St. This is home cooked, soul food, cajun meals. Most of it is on the spicey side, but not so spicey you can't eat it. My dining partner said the mess of greens were some of the best he ever tasted. I preferred the black eyed peas and okra, which was not fried. We both liked the Cubion, a seafood dish with fish and jumbo shrimp in a tomato sauce served over rice. I also had meatloaf there, which tasted just like Mom use to make. Richard's is very reasonably priced.

Some locals suggested we try Floyd's Cajun Seafood & Texas Steakhouse, 2290 I-10, Beaumont, Phone: (409) 842-0686 (Formally - Don's Seafood). The portions are very large, and my dining partner found the prices to be reasonable for the amount of food you get. Stay away from the garlic bread, which is so good, you end up getting stuffed on that before your meal comes out! Floyd's was absolutely packed on a Tuesday night, and once we got the food it was obvious why.
