Hi. Does anyone know where I could buy/order a carambouche, the pyramid of profiteroles stuffed with cream and enveloped in a web of caramel? Any tips would be appreciated. Thanks!

  1. search the board for croquembouche

    1. That's croquembouche, and call Monsieur Marcel and ask them to recommend a place... I saw one on display a couple of Christmases ago and it was from somewhere else (i.e., not made in-house).

      1. I know la Maison du Pain make some, but I've never tried them.

        1. It's been years since my last sampling, but Paris Pastry, on Westwood Blvd., used to do a great job with these (and they probably still do).

            1. I have knowledge that Europane Bakery in Pasadena has made that as a special order once for a friend. I don't know how cheap it would be or if they would do it again but it is worth asking Sumi.
