i'm not sure about local butchers. if you strike out on that front, i suggest calling some of the local beef producers, like bastrop cattle company. i am under the distinct impression that they have their steer processed locally, as well, so you would probably be able to get non-steak type things from them.
I've seen the at Fiesta north, but never the south location. And never at any of the third-world HEB's. If La Micochana has them then they must be behind the counter out of view (or at he steam table).
I can't remember if I posted this same question a while back or if I just read someone else talking about it, but one person talked about a steakhouse in Waco. I can't remember the name, though; sound familiar, anybody?
Anyway, I didn't make the 1.5 hour drive for balls :P

Third World HEB = Lamar and Rutland.
7th and Pleasant Valley doesn't seem too bad. But I only go to that one at 6:30AM once a week or so - never during rush hours.
