I have been ordering from D'Artagnan but would rather avoid the $25 fedex charge and find Moulard legs and magrets locally (prefer ease of the parts at the moment but will settle for a whole duck plus legs). I have tried a couple Whole Foods, Vicente foods, and the poultry stall at the 3d St Farmers Market and not only do they not carry them, their butchers haven't even heard of Moulards. Does anyone know where I can find these products in LA, and why they are evidently so exotic?

I don't know where you are located but here are a few gourment butchers and purveyors (MOSTLY in the SFV/Bel Air) from a list that I save from an LOS ANGELES MAGAZINE article a few years ago AND used it a lot- HOPE THIS HELPS!

CHECK OUT BEL AIR PRIME MEATS and FALLBROOK MARKET and and most definitely MARCONDA'S MEATS -- addresses and phone numbers are in the blurbs -- recommend you call first to find out hours...

BEL-AIR PRIME MEATS - there is also a BEL-AIR GOURMET MEATS near by you may want to call 411 for their info
Beverly Glen Marketplace, 2964 Beverly Glen Cir.,
Bel-Air, 310-475-5915.

AN ELITE CLUB COMES TO THIS TINY spot for California-raised Harris Ranch beef, dry-aged in the shop for 14 days. Proprietor Joe Rosa's star-studded clientele depends on his cooking as well as his culling: He can roast whatever strikes your fancy--turkey, guinea fowl, capon--to perfection in his sturdy Chitwood ovens. He'll also smoke any meat, fowl, or game over hickory chips.

Succulent veal chops, rack of lamb, and frozen game birds are part of his larder, but any game may be had fresh with a few days' notice.

JIM'S FALLBROOK MARKET
5947 Fallbrook Ave., Woodland Hills,
818-347-5525

ALL THE CUTS AT THIS HUMBLE Gourmet grocery are excellent, but it's the wild ones that make the selection truly extraordinary: frozen slabs of finely ground venison, ostrich meat from the leanest part of the bird, top-grade buffalo loin, and for the holidays, a flock of exotic fowl--duck, goose, pheasant, and quail.

Ask nice and they'll special-order your suckling pig, wild boar, even rattlesnake.

MARCONDA'S MEATS
Farmers Market, 6333 W. 3rd St.,
323-938-5131.

PREMIUM BEEF SUPPLIERS ARE LIKE any business--each claims its stuff is the best on earth. So we tried Vintage Natural Beef for ourselves, and it is good, damned good--grain-fed and hormone-free. Marconda's carries the line on its pristine shelves; you can see the vitamin B goodness in the luscious round steaks and sirloin stew beef cubes.

Another counter harbors the poultry.

GOOD LUCK!

thanks for suggestions & will investigate. I had seen the lamag list in print & on line and confess to have bypassed Marconda which I was not aware carried duck or other poultry though I have in the past enjoyed as resource for pigs and calves and so on (thanks for the heads up for fowl and game); the two poultry markets to which I think the article (vs poster) referred (both at 3d St) purport to carry 'Long Island' (which I take to mean Pekin) duck exclusively; I did pursue with both but no luck.

Referrals still seem to be 'specialty' and nothing on moulards; who out there is ducks unlimited and come to think of it haven't seen the bumper stickers or gun racks in a really long time. ?? btw thought moulards desirable for fat rather than lean wild meat, correct me if I'm wrong (& deposit drawn specimens on my doorstep! gracias).

Nicole's Gourmet Foods in South Pasadena carries Magret and Foie Gras. Very reasonable prices, too.

I phoned Nicole's and was excited to learn they did indeed carry Moulard legs and magrets but after a mad dash in the after work rush hour from downtown (Nicole's closes at 6) discovered they are already cooked. I ended up buying Muscovy legs and a magret from Bristol Farms and realized after the fact that I'd payed as much as I would have done had I kept my original order with D'Artagnan--including fedex charge. Oh well. I will post back on the results after this weekend's dinner, and still baffled by the seeming unavailability of Moulards in LA.
