What to do with millet?

I bought some millet from the bulk bin and it's been sitting in the cabinet. I want to cook it tonight and save the leftovers for lunch tomorrow. Google told me to basically cook it like quinoa- 1 cup millet to 2 cups water, cook till tender. Is this the right way to cook it? What can I add to the cooked grain? I have cauliflower, broccoli, cilantro, parsely, carrots, and roasted tomatoes in the fridge, onions in the pantry, and turnips and peas in the freezer.

Any ideas would be appreciated!

  1. I just tried millet for the first time a few weeks ago and loved it. My cookbook (The Hippy Gourmet) recommends three cups of water to 1 cup of millet. I would go for 2.5 cups, personally. Haven't done it yet, but I'd really like to make a millet tabbouleh. Given what you've got in the fridge it looks like you could make a tasty millet risotto, or maybe a risi e bisi with millet instead of rice? It's a very mild flavor, so you could do pretty much anything with it.
