Hey, Chowhounders-- I'm stuck between a rock and a hard place; over the past year or so I have lost 50 pounds, and as part of that I began paying attention (!) to what I eat, eating more vegetables and not eating anything with 4 legs (cows, pigs, sheep). However, as I began cooking more of what I ate I began to experiment with flavors.
Now I am much more interested in the best food possible, I feel torn between 'healthful food' and 'gourmet food'. How do YOU find your middle ground? And has anyone else felt this division?

  1. My experience has been that the more mindful of quality and taste I am, and then correspondingly the more discriminating I am, the less crud I eat and the healthier I am. Unless you equate "gourmet" with butter, cream and foi gras, eating well is compatible with healthful eating. Portion sizes and fat need to be watched, but pretty much anything is ok in reasonable portions. Bulk up on the vegetables and have small portions of the rest.

      I don't see that there a division between healthful and gourmet or good/best food possible. Great food can be healthful and nutritious as well. Sometimes great food will have things like butter and cream and fat and such, but in moderate amounts and eating moderate serving sizes of those dishes, one can enjoy a wide, wide range of foods and still maintain a diet that allows for weight management. Using fresh herbs, fresh vegetables, homemade stocks and lean proteins can really let flavors stand out without having lots of fat and sodium in a dish. Thus, I think the middle ground is the natural place that food should be. A combination of flavors and textures and vegetables and proteins all used to some extent but none used to too great an extent.

      1. Hey AG, CONGRATULATIONS! Fifty pounds is a major achievement. Several years ago, my son would not eat anything with four legs, now, he will not eat anything with a face or anything that comes from something with a face.. He is a Vegan. Do not worry about what others think. The best food is what you find to be the best for you.

          Thanks everybody! And I must admit, packaged chips, snacks, and soda isn't appealing to me anymore. The way I see it: quality over quantity, and the last bite tastes the same as the first, so why put so many bites in between?

        2. My husband and I are long-time (30+ and 15+ years) vegans and I'm gluten-free. We prepare and eat plenty of great food though I don't know that one would necessarily consider it gourmet. I guess it depends on the definition of gourmet. When I think of gourmet I first think expensive and tiny portions.

              Oh, yeah. It just frustrates me that people seem to equate 'low-calorie' with bland, chemical-laced packaged foods or flavorless chicken dishes. When I try to convince one person to do a lighter recipe, they complain before even trying it how "You can't lighten that up", or "That recipe's no good".
