Violon D'ingres or...

I'll be in Paris in May for 5 nights and currently plan to visit:

1)La Regalade
2) Chez Ami Jean (lunch)
3) Les Fables de La Fontaine
4)Violon D'ingres

Backup ideas are: Chez Michel, Chez Denise, Dominique Bouchet, Christophe

The last night I'd like something a little more upscale and comfortable than La Regalade or CAJ which is how I settled on Violon D'ingres. Can anyone recommend places that are comparably comfortable and relaxing within the same price range (50-60 euros pp for food)?

Also, how far in advance should I place reservations at the above places?

    I am a huge fan of Dominique Bouchet and their 6 or 7 course tasting is about 85 euros pp...intimate , not at all touristy and wonderful food in a very warm setting ....and a bit upscale ..but not stuffy ...a bit more than your price point but in my opinion very worthwhile
