Green Banana turned yellow on me

Any quick recipe ideas? thinking of making them tonight but don't feel like a long cooking process.

    Slice it thinly, arrange on a plate, sprinkle with cinnamon and sugar, microwave for 1 min. It tastes like a flambe banana- only healthier!

            I have ben enjoying the treats nightly since my original post. Thanks all. Todao, may I have your recipe for Coconut/Banana Chicken as I have never had that dish.

            oh - gosh this got me thinking back to my childhood in Tampa where the banana boats docked within a mile of my house......

            I have to admit that I've never been one to think of ingredients in relation to time of day, so you may find me eating cereal for dinner and osso buco for breakfast. With that disclaimer - here are some of my favorite things to do with banana(s)

            smoothie
            any frozen ice cream or yogurt with sliced banana
            Fresh Greek yogurt w/ banana, honey and your choice of nuts
            let them sit a few more days and make delicious - not just good - banana bread
            melt some chocolate in the microwave, dip the banana(s), then freeze
            cereal w/ milk and sliced banana
            hot cream of wheat with mashed ripe banana (my childhood favorite)
            lightly grilled - outside preferable but inside grill pan ok - drizzle with honey & chopped nuts
            banana pancakes

            or....

            Ice, Light rum, dark rum, coconut milk, banana, pineapple - throw it all in a blender and whir

            you may have guessed we had a "boat load" of banana's at our disposal..... :-)
