We make a Thai Satay Chicken Pizza. Satay sauce spread over the pita and add on a 'smallish' amount of finely shredded monterey jack cheese, (cooked) cubed pieces of boneless skinless breast meat chicken, drop on some bean sprouts and finely chopped green onion for a little crunch bake in toaster oven @ 400 degrees for about 15 minutes. Remove and garnish with 'rough' chopped cilantro leaves.

I've not used pitas in a long time, but usually it's along the lines of tomato, basil, mozz and balsamic vin.

I just picked up a recipe for pita bread on the grill. This would be a great way to test it out. Thanks for the reminder.
