"Is Foie Gras Torture?" (Village Voice article)
Interesting article from The Village Voice. A reporter goes inside Hudson Valley Farms to observe the production of foie gras first hand.
This story is a must-read for everyone. Its only sin is being way, way too long. I also like that the reporter divulges her own prejudices in the final grafs, and admits that she was open-minded enough to look at the evidence.
I have always enjoyed Hudson Valley foie. From now on, it's the one I'll buy unless I have similar assurances from another producer. Lucky for me, I don't really like foie all that much, and have little occasion to eat it. Prepared in a torchon, I wouldn't cross the street for it. Give me artisan butter any day.
Well, the story does have one other sin: It describes people as "95 percent vegetarian." That is the same thing as "not vegetarian at all."
