Noodles, pickles and peanut butter sushi???

Just caught a segment of "Cooking with Christine" on my local PBS station. (first time I watched her) Christine was cooking vegetarian meals for kids and suggested a noodle, pickle and peanut butter sushi roll, that just grossed me out. As anyone tried this combo? Is it good?

    an interesting concept! i do like pickles, but haven't tried them with peanut butter, although i seem to recall some hounds who do combine those two items.

    i think the show is called "christina cooks!" -- i catch it every now and then. i read her "story" and didn't realize her macrobiotic, vegan lifestyle was a response to her diagnosis with leukemia at age 26.

    is the smitten troubadour her husband, mr. pirello?

      I took a look at the recipe. The combo of ingredients is intriguing -- soba noodles, pickles, peanut butter, and nori. The prep is too fussy and time consuming for me, plus I have limited counter space. I might try this combo with normal boiled noodles, peanut butter dressing, sprinkled with minced garlicky pickles (small amount), and shred some nori (with scissors) on top.
