I am hosting a St. Patrick's Day party for 30+ people. Can I make the corn beef the day before the party and warm in an oven while I cook the onions, carrots, cabbage on the stove top? Any help would be appreciated!

Yes you can re-heat meat like that. This post may come in handy: http://chowhound.chow.com/topics/366140

But if you're truly making your own, it takes longer than one day to make... more like 2 weeks.

I make mine all in one pot. Cook the meat for several hours in a large stockpot with a cut up carrot, cut up stalk of celery, and rough chopped onion, some pepper and bay leaf. Add the potatoes, cabbage and carrots about an hour before you want to serve. You can make the whole thing the day before if your refrigerator is large enough to hold the stockpot and just finish cooking it the next day.

Good point. That is, in my opinion a far easier way to do it. And probably the way I would do myself in the event of a party.
