Seafood & Citrus Recipes [Split from General Topics]
Yes, recipes for scallop and shrimp dishes with oranges or grapefruit would be most welcome, kc ---- TIA. Mostly we just eat them out of hand (oranges) or halved (grapefruit), for a little bit of sunshine in our white winter landscape! But it might be nice to have some variety, and try some cooked dishes.
I like scallops for this one
2 -3 lb scallops
pancetta to wrap them in (I cut in thin strips)
Marinade in some olive oil 1/2 cup
1 diced small onion
1 tablespoon garlic minced
red pepper 1 pinch
a little sugar
1/4 teaspoon dried oregano
* 1 tablespoon cornstarch
* 3/4 cup chicken broth
* 1/3 cup orange juice concentrate
* 1/4 cup honey
* 2 tablespoons apple cider vinegar
* 1 tablespoon Dijon mustard
* 1/2 teaspoon dried tarragon
I bake my scallops and then serve with this sauce. Very tasty.
1/4 cup of orange juice
1/4 cup grapefruit
1/4 cup honey
1/4 cup white wine
1/4 cup chicken broth
1 1/2 teaspoon dijon
Tarragon 1 teaspoon fresh and diced
corn starch to thicken
Mix all and let reduce by half and serve over baked scallops
I love to serve this with some toasted baguettes. I use a base of orange marmalade on a toasted baguette and then top with gruyere and melt. I serve the scallops over this bread. A great alternative to pasta or rice.
I'll post again if necessary. I have a couple of others, one with brown sugar orange and grapefruit and some lime juice that is grilled. It is a simple mixture of cilantro , juice of grapefruits and oranges brown sugar and honey and then grilled a simple marinade
Another one which has cumin, chili powder, orange juice and lime and then marinaded and pan seared scallops.
One with a orange juice and cream sauce with cumin and sauteed onions over angle hair pasta
One with soy, orange juice, water chestnuts, almonds, orange slices, onions and fresh shrimp and scallops stir fried. Served over jasmine rice.
Just say which and I can post. I just hate to paste all. Be glad to post any recipe for you. These are just some that I also make, the others are my favorites. Tasty ways to use citrus. Also this is great with Tilapia, flounder, cod of any of your favorite white fish. With salmon it is good, but I prefer a white fish for this. For poultry citrus it more of a background flavor. Uses of jalapenos, chili powders, a fruit juice and garlic is a great blend. Also an Asian flavor works well..

GREAT WITH SHRIMP OR SCALLOPS OR BOTH
This has onions, grapefruit and oranges and shrimp. I like this served over a jasmine rice. I boil the rice with vegetable broth and orange juice which makes a great flavor. I also add some chopped pecans, a chopped spicy pepper (I like a red jalapeno with ribs and seeds removed, so not too hot) and scallions in the rice. I top this with my grilled citrus and shrimp
1 lb shrimp peeled , tails on
2 grapefruits, 1 juiced and 1 peeled and sectioned
2 oranges, 1 juiced and 1 peeled and sectioned
8-10 chippollini onions or small white pearl onions cut in half
3 I like red but either red or green jalapeno peppers chopped, some seeds are good
1 cup dry vermouth
1/2 cup olive oil
1/2 cup cilantro chopped
Salt and pepper of course to taste
Mix all ingredients and marinade at least 2-3 hours. Then alternate the shrimp onions, and grapefruit and orange sections on the skewer. Grill on medium on a outside on inside grill, brush with marinade.
This is served with my jasmine rice as I stated at the top
Shrimp ... my favorite for oranges and grapefruit...
This is simple and very healthy.
1 lb shrimp peeled and tails off
1 1/2 cups garlic couscous uncooked
2 medium pink grapefruit
1 avacado diced
1/2 red pepper thin sliced
3 scallions diced on an angle
2 teaspoons minced garlic
2 tablespoons lime juice
2 tablespoons olive oil
1/4 or a pinch of red pepper
1 teaspoon ground cumin
1/4 cup chopped cilantro
Peel and section the grapefruit and set aside. Make the couscous according to directions. I like to make mine with vegetable or chicken broth. I make mine just in a bowl. Add boiling liquid and cover with plastic wrap and 5 minutes later, presto. Now lets make the shrimp, Heat the olive oil in a large pan and add the onions and garlic, then the cumin, red pepper flakes and shrimp. Stir in the grapefruit, cilantro, lime juice, salt and pepper. Remove from the heat and stir in the avacado. Toss over couscous and top with fresh lime slices.
Easy and delicious.
