MahiMahi Cheeks - different prep to Fillets?

I just picked up some MahiMahi cheeks from the market and wondering if anyone could a) tell me if i should prepare them differently to MahiMahi fillet and b) suggestion recipes?

    I have not had Mahi cheeks but lots of grouper cheeks. With grouper there is a membrane that should be removed and after that I often lightly dust in flour and pan fry. The texture is kinda like crab
