I am looking for recipes for smoothies that include nut butter. I've got lots of organic peanut butter on hand at the moment that I'd like to get rid of. I don't do dairy but I would use soy milk in place of regular milk.

Ideas? The healthier, the better.

Drop about a cup of soy milk into the blender. Add a cut up banana and 2 - 3 tablespoons of peanut butter with 3 or 4 ice cubes. Blend it up to smooth consistency. You can adjust the consistency by adding or subtracting ice cubes and/or using a packaged gelatinized soy product if you prefer.

I do lots of banana-blueberry smoothies but I thought that peanut butter would be kind of gross in it... if other people do it I guess I'll try too!

almond butter is really the best with that, but some of my clients don't like almond butter & they're pretty happy using PB instead.

then again, there's no accounting for taste, so try at your own risk ;)

BTW, i love strawberries with PB or almond butter, so you could always do those instead of blueberries. and believe it or not, mango actually works too. but for a more classic pairing, you can always just chop up & toss in an apple.

Peanut butter goes with just about anything. Try it with dill pickles; even in a smoothie. Make up a vanilla smoothie with a couple of cloves of garlic. Adventure in food - it's a beautiful thing.
