Flourless Chocolate Cake

I'm in need of a flourless chocolate cake recipe for Valentines day. I've made a couple flourless cakes before, but they all turn out far too rich. Could anyone either point me in the right direction of a rich but not super rich flourless cake, or give me tips on how-to lighten the current recipes?

    David Lebovitz' version is excellent version. It's even better with a teaspoon or so of vanilla extract added.

      No mention of La Reine here? The Queen of Sheba is the royalty of wheat flourless chocolate cakes and also uses almond meal. Julia has a great recipe and there are loads online, too.

      I'm planning on trying this one...seems reasonable 1 tbsp of butter per serving but a whole lot of chocolate! :)

          i use Donna Hay's recipe...
          i don't have it offhand, but it's essentially sub-ing the flour for almond meal, and adding another egg or two.

          i thought it was DEEEELICIOUS!

            7oz chocolate
            1/2 cup sugar
            1/2 cup butter

            melt it all together and cool for 5 min

            1 cup almond meal + 4 yolks
            fold in 4 stiff whites

            mix it all up, pop it in at 350 for 25-30

            eat

              Looks good, looks easy, but what size pan do you bake this in? And should it be a springform pan?

                muffin pans! you'd have small personal-size cakes

            It's not as dense as others I have made. But it is still rich and very very good. It will crack all over on top, that is to be expected.
