Flourless Chocolate Cake

I'm in need of a flourless chocolate cake recipe for Valentines day. I've made a couple flourless cakes before, but they all turn out far too rich. Could anyone either point me in the right direction of a rich but not super rich flourless cake, or give me tips on how-to lighten the current recipes?

  1. I like Nigella Lawson's recipe for Chocolate Cloud Cake:

It's not as dense as others I have made. But it is still rich and very very good. It will crack all over on top, that is to be expected.

    1. i use Donna Hay's recipe...
i don't have it offhand, but it's essentially sub-ing the flour for almond meal, and adding another egg or two.

      i thought it was DEEEELICIOUS!

i can check the recipe later tonight

        7oz chocolate
        1/2 cup sugar
        1/2 cup butter

melt it all together and cool for 5 min

        1 cup almond meal + 4 yolks
        fold in 4 stiff whites

mix it all up, pop it in at 350 for 25-30

Looks good, looks easy, but what size pan do you bake this in? And should it be a springform pan?

            oops! forgot that...

muffin pans! you'd have small personal-size cakes

        1. ghiradelli has a great one, I loved it go to their website.

          1. I'm planning on trying this one...seems reasonable 1 tbsp of butter per serving but a whole lot of chocolate! :)
