Excellent Bison Found
Hollywood Farmer's Market now has a stall selling frozen bison meat.
We have used the stew meat three times and have been delighted with the result. We use it with Child's carbonnade recipes with bitter beer and it is superb, far better than the same recipe with beef.
Highly recommended.













Thanks. Better/same/different than the frozen (and occasionally fresh) bison you can get at Whole Foods? Cheaper?

Never had the bison from Whole Foods so can't compare. The bison is *roughly* $5 a pound I think.
We use two pds rather than three pds for the recipe and have extra sauce.

I also bought bison, although at the Pasadena Farmer's market. It is grass fed -- don't know whether what is carried at Whole Foods is. Also, as Judi pointed out, the bison at the farmer's markets are quite inexpensive, although not necessarily more convenient.
And thanks (above) for the recipe tip. I still have my buffalo stew meat in the fridge -- sounds like a good thing to me.

Good point about grass fed. Grass fed = happy animal = sleep at night.
BTW- The stew is excellent with a heaping teaspoon of Spanish smoked spicy paprika added before it goes in the oven. (pimenton).

I can't tell you which Pasadena Market Rebecka had in mind, but I did want to mention that we also saw the frozen bison people at the Encino Farmers Market (17400 Victory, between Balboa and White Oak) last Sunday; so it seems they are getting around.

I found a web site that sells bison and elk at unbelievably reasonable prices. I placed the order Sunday, it shipped Monday and arrived today. Shipping starts at $30.00 but doesn't go up much from there. I got Elk burgers, bacon and tenderloin and Bison fillet mignon and New York steaks. I have not cooked any of it yet but it looks pretty great.

If you want to take a Sunday ride go to the Antelope Valley Winery. They carry buffalo. You can also mail order from them I believe. You can find them at www.avwinery.com. Can't figure out how to enter URL information. Lessons needed.
