Please help me pick restaurants for our stay in LV

We are going to Las Vegas for 4 nights in April. We are going to two shows at 7:00 pm and we are 7 people (3 children who are ten year old). We love food (except thai) and are from Miami. What do you all suggest for early night dinners? Not too fond of buffet dinners.

It would help to know what price range you are interested in and whether or not you'll have a car.
