Desperate for hazelnut paste

wellworld Feb 9, 2009 03:59 PM

I have been unsuccessful in locally sourcing hazelnut paste for a chocolate cake. Does anyone have a resource for me? I have tried Sur la Table, Mollie Stone, Williams Sonoma, and the like. I need to make this tomorrow, so ordering via the web is no longer an option. Thank you very much for any help you can offer.

Can you make your own? Could you use a recipe for almond paste but sub in hazelnuts? I googled and there are a bunch of recipes, including this one: http://www.recipezaar.com/Hazelnut-Pa...

I just called The Junket (they carry an amazing stock of British and German goods) in El Cerrito for you and the woman knew of exactly the product and asked if I was baking something. She said it was really a speciality item and if anyone would have it, it would be Andronico's. Good luck.

I have seen it at the pasta shop in Berkeley. Give them a call, it has been a while.

I've definitely seen it at the Pasta Shop on 4th St and the one in Market Hall on College, and also at the Spanish Table on San Pablo.

            Rainbow grocery might have it.

Rainbow Grocery carries both hazelnut butter and ground hazelnuts (hazelnut flour). Hazelnut paste is just flour processed with some sugar and egg whites, you can find recipes online. If this is going in the cake batter, hazelnut butter with a bit of extra sugar and egg whites would be an easy substitute with no textural difference.

If you're really looking for pralined hazelnut paste (the sugar involved is caramelized before grinding), I haven't seen that locally but I just make it myself.

Thank you so much for all of your help. SF Chowhounds are a lovely, wonderful bunch of peeps. Boulette's Larder in the Ferry Building carries it.
