The recipe of the day is for Cacio e Pepe's cheese pasta - It's just fine as long as you've never been to Cacio e Pepe - There the pasta is tossed hot into a giant hollowed out wheel of cheese, tossed, put on your plate with a grind or two of pepper right at your table - Seems like a poor country cousin of the real thing.

      I think you're talking about this recipe: http://www.chow.com/recipes/11422
      Which isn't associated with any restaurant at all. "Cacio e pepe" was the name of the pasta dish first. It sounds like a restaurant adopted the name and gave the dish a signature -- and rather baroque -- flourish.
