My fave is Pork Chops With Apples & Yams.
Peel and dice a yam and chopan apple. Salt & pepper the chops. Sear them in a bit of olive oil, then remove. To the pan add 1/4 cup of frozen concentrated orange juice and the yams. Saute the yams until they're beginning to get soft. Then return the chops to the pan. Simmer to heat the chops through. In the last 5 minutes, add the chopped apple and cook just until it starts to soften.

You're going to get all sorts of suggestions with hot peppers and various ethnic preparations, most of which are applicable to multiple cuts of pork. Where you have "nice pork chops on the bone", I'd be inclined to do an old-style grilled or breaded & fried chop - these days, that IS unusual! - and leave the creativity for the sides. For me, pork means cabbage, sweet potato, apple/cider or other fruit, onion, garlic, beer, soy sauce, ginger - any or all.
