Vegetarian in Las Vegas

Will be on a short business trip to Las Vegas later this month and looking for vegetarian/vegan-friendly restaurants. Searched the boards and found next to no info. Will be staying at the Encore and doing some work at Caesar's. Not looking for a takeout place but a nice place suitable for dinner and drinks. Preferably on or near The Strip. Thanks!

    There is a particularly nice setting right next door at the Wynn - Tableau does a six course vegetarian tasting menu, which is also available with wine pairings. You can also request one at Bradley Ogden at Caesar's Palace, which they do not list on the main menu. A little more casual is Enoteca San Marco at the Venetian; their "Verdure Grande" (seven different vegetable sides, all served in their own crock) with a good bottle of wine is a personal favorite. Note that they use some meat as seasonings on some of those dishes, but will remove them if asked.
