Does Adolfs Meat Tenderizer still exist?
Well my really old bottle is almost empty, and I hate to remember when I may have purchased it in the first place. I've been using it more often lately since I've been buying meat on sale at the supermarket, rather than $30/lb at the butcher.
All I can find is McCormicks meat tenderizer which is salt and MSG. Adolfs is papain based. I use it in conjunction with my grandmother's time tested method of a little whiskey to moisten, and it works really well. I bought Porterhouse twice this month for $3.95 and it came out not half bad. Guess I can Google too, but just wondered if I'm the last person on earth still using this stuff?

i just spoke to Lawry.. they changed from papain to bromelain within the last year.. they claim they tested and got identical results.. i had accidentally bought McCormicks and discovered it didnt work as well as my old Adolph's .. the new Adolph's is now just as bad as McCormicks..
i found online that Durkee's is still using papain and will try theirs as soon as i find where to buy it .. Lawry has "improved" Adolph's right out of my kitchen ! -
Hey you know what, I used to buy these 'digestion aid' tablets in the health food section of my grocery store that listed 'papaya enzyme'. (The ones with chlorophyll sweetened your breath!) I'm wondering if you can't somehow find the papaya enzyme on its own and concoct your own version of Adolfs?

It must still exist. Here on the coast people are told to carry it with them to the beach in case they get stung by a jellyfish. Supposedly it helps ease the pain from the sting. Don't know if it really works or not.

Pretty sure Adloph's is still around...there are other brands though too. Not all of them use Papain, some use Bromelain which is pineapple derived but does the same thing (which I learned the hard way when I used fresh pineapple and juice instead of canned when baking a ham...it turned some of the ham into mush).
I think most of the tenderizer shake-ons will also have salt as an ingredient...I don't have an Adolph's to label check, but would be surprised if it doesn't also contain salt.›5 Replies-

The old bottle I have is made up of salt, sugar, tri-calcium phosphate, papain and vegetable oil (partially hydrogenated, wonder if that's changed?) I don't mind the salt, just put less on before cooking. But the McCormicks, which is all I could find, was just salt and MSG, no papain, which seems to be the secret. Here's a story I found from the 1950s (which may be when my bottle is from too!) (Just kidding, but not by much)

Just got my giant brand new bottle of Adolfs and surprise, the ingredients have changed in the last 20 years. Now it's just salt, sugar, food starch (prevents caking) and papain (from papaya fruit). It says "No MSG" in big print all over it too. It's dated Oct 31, 2011, wonder how much I'll use by then?
