What to do w/ ground chicken for dinner?

I have some fresh ginger, onions, garlic, crushed tomatoes, bread crumbs, parm cheese, rice on hand. I thought of ginger stir fry or italian style meatballs but would really like to try something beyond the obvious. Any ideas??

  1. How 'bout Asian meatballs? Last night I made sloppy Joes w/ground turkey...carrot/celery/onion/garlic then red wine, crushed tomatoes, chili powder, Adobo, a little wine vinegar, brown sugar and Worcestershire. It was pretty tasty and would work just as well over rice as on a roll. White chicken chili is also good with ground chicken.

    1. - chili with chicken instead of beef
      - chicken burgers with ginger, breadcrumbs, garlic, and carmelized onions on top

        Chicken Chili would be my choice but if you want something beyond the obvious make a pizza using the ground chicken as the crust. Non stick spray an oven safe frying pan and press the chicken into the pan to form a "crust". Bake at 375 for about 12 mins. Put your favorite sauce, cheese and toppings and return to oven for another 12 minutes. We generally make it a buffalo pizza with wing sauce and for the cheese use a combination of pizza cheese, blue cheese crumbles and dabs of bottled blue cheese. One of our friends has used all kinds of toppings. Low carb and your mind thinks it is bread crust and not the chicken.

      2. How about porcupines? They are meatballs with the rice mixed in, then simmered til meat and rice are both done.

          1. -Italian meat sauce or meatballs
            -meatloaf
            -chili
            -stuffed cabbage or stuffed pepper
            -picadillo

            1. Toss it all in a skillet with a bit of EVOO, crumble the meat, and cook til the chicken is done. Serve over farfalle or other 3D pasta.
