I'm interested in this also. I looked into it about a year ago. I know Cooking Uptown has a service. You drop them off and there is a 24 hour turn around. $6/blade. I don't know anyone that has used them though. http://www.cookinguptown.com/
Sur La Table I think does sharpening as do many local hardware stores (Renfrow's and the one in Park Rd. Shopping Ctr).
A friend owns a resto in town and they use Carolina Cutlery... but I think they only work w/ commercial accounts. If I remember correctly, they supply the knives then return a week or two later and trade them out for freshly sharpened replacements on a regular basis.
If you use a service, please let us know how it goes.

I wound up usng Sur La Table. $1 per inch. I droppd them off on Saturday and they were ready on Monday. They seem to have done a fine job. Getting in and out of Southpark Mall is a bit of a hassle, obviously. When I first posted this, I checked Cooking Uptown's website, and it said they only did sharpening once a month. It nows says they do it every week...drop off on Thursday and pick up on Friday, so I may try them next time. Blackhawk Hardware (Park Road) offers sharpening, but you have to drop off on Monday, Wednesday or Friday berween 11:00 and 1:00 (I think) and then pick up 2 days later during the same hours. I tried calling Cutter's Edge but no one ever answered the phone.
Thanks for the help!

Good to know, thanks for posting your findings. I assume Sur La Table did a good job? I really need to do this. I've gotten all the honing stones, steels and knife sharpeners you can think of and they just don't do the trick.

I haven't had a chance to do much knife work since I had them sharpened earlier this week, but I have used them a couple of times and they seem to be fine.

I've used Cutter's Edge many times, although it looks like they're in a new location, so maybe it has been awhile. And I recently found Jack the blacksmith at Bradford Store in Huntersville, who sharpens knives while you shop.

Just to let everyone know who may be interested, I recently used a new mobile knife sharpening service here in Charlotte. Its called A Finer Edge. Very economical, ($3 per knife) and did a fine job. I am very satisfied. The owner, Gary, is very personable. He primarily (but not exclsively) services the Ballantyne/S. Charlotte area, and is available at the Carolina Country Store on Highway 521 every Saturday morning starting at 11:00, and will also come to you, of course, or meet you at a convenient location. Details are on his website, www.afineredge.com

I have used him also, CD. Great job, very reasonable prices. He's an "interesting" guy, I think he used to be an autocad engineer or draftsperson but was laid off some time ago and then became certified in sharpening. He has a van that houses all of his equipment and he comes to you. He did 8 knives for me in 15 mins or so. He also does lawn mower blades, scissors, etc.
