I grew acorn squash for the first time this year. I made the mistake of taking them off the vine too early. They ripened in my cold storage (they are now orange). However they are very young tasting, not a lot of flavor.

can anyone think of a preparation that will boost the flavor, or even just give them some flavor. I have tried roasting them cut in half, and cubed with oil, maple syrup cinnamon and cayenne, they were okay, but not great.

thanks!

Roast them with onions and thyme. Smash the squash and include the diced onions. A tad of honey might be necessary if the onions aren't sweet enough.
