I suppose the idea is to make them the consistency of grits or thereabouts. How to go about this?
Just like mashed potatoes... Mash with a handheld masher, add a bit of fat (butter, sour cream) then use a stick blender or food processor is you want really fine consistancy.
To all the above, I would add; put them back in the pot after stick blender, and cook a little moisture out....Also, onion powder helps the flavor, for some reason...
I put mine in the food-processor, add some heavy cream, some butter and salt and pepper....

Steam the cauliflower then use a hand held blender.
