Makin' Bacon?
Hiya!
Reading a few recent posts it seems local hounds (rare_g and Blind Mind) share our love of really good bacon. While this weekend will be dedicated to creating the PERFECT Bacon Explosion, I was wondering where you South Florida hounds (or any hounds on the board) go for a great bacon fix? I'll take restaurant suggestions and SHOPPING tips for really quality meat.

BTW, Fresh Market carries packaged Niman Ranch Bacon and the premium bacon in their meat department is Nueske's bacon which I enjoy also.

ahhh, bacon. I still remember ordering a wollensky salad for the first time and seeing CHUNKS of perfectly cooked bacon.
Side note, have you read Padma's Tangy Tart Hot Sweet? She includes an ode to bacon towards the end.

I read about the Bacon Explosion very briefly in an article that mentioned it but never clicked the link to the main article. Best line, “You need to call 911 after you are done. It was awesome.” LOL
For my local bacon fix, I like Fresh Market in the Grove. They have a few kinds there - smoked, peppered, turkey (aka poser bacon), etc. Michael Schwartz was also smoking his own bacon and that was a nice treat while it lasted.
Also, a local blogger, "I shot the chef", posted a recipe for bacon butter that I got thoroughly carried away with around the holidays. It too was awesome.

Well I got some real good hickory smoked thick bacon at a local market here in Sarasota, and no one liked it. They prefered my Smithfield regular (thick) but not like the butcher shop, just thick for packed. I got it right at Publix. They still love it. I brush just a drizzle of maple syrup on it, just a bit mixed with a dah of pepper. Bake it on parchment paper in the oven 425 till crisp but not over cooked. Still a favorite and I agree. I've bought very expensive top quality and still they like that.

For mail-order bacon (what a great world we live in!) we order from Burger's Smokehouse or New Branufels Smokehouse in Texas http://www.nbsmokehouse.com/
Locally, we like the bacon at the Real Emil's European Sausage Kitchen in Deerfield Beach. Walter makes a regular and a double smoked slab bacon that he'll slice as thick as you want.
More importantly AG, how did the Bacon Explosion turn out?

It was a BIG greasy success. Now we're heading to 8 ounce based on BlindMind's mention that Michael Schwartz of M's Genuine smokes his own bacon - we read that Govind Armstrong is SMOKIN' bacon in house too!
I'm right up there with burgerbeast.com in my pursuit of a perfect bacon burger (not ready for that Doomsday at Kingdom yet).

I read that about 8oz today too and started to sweat a little. More house smoked bacon in Miami? To quote Homer Simpson, "Arrrrrrrrggggggggggggggghhhhhh...."
AG - the best freakin burger in Miami is at the Love Food Cafe (or what my friends and I refer to as "Cheeseburgers on the Beach"). Both the bacon cheeseburger and the jalapeno burger are the bomb and each is made to order and served HOT. The place is located on the sand itself at around 21st Id say. I usually walk down either 17th or Lincoln, hit the sand, and head left until I see the yellow awning with the Love Food Cafe sign. Being on the beach adds to the awesomeness factor, although the douchebags from the City of Miami Beach removed all of the tables for eating because of complaints from adjacent hotels who "lease" their chairs and umbrellas. Or something to that effect. That may have changed though, its been awhile since Ive been. I guess I'll just have to go this weekend...

I am thinking about making Blind's bacon butter this Sunday - which brings to mind any number of NSFW end uses!
Burgers are a Prime Motivator for me.
Is the offer at Kingdom REALLY a free Doomsday Burger if you can eat 24ounces in under 15 minutes? I think we may need to schedule a CHOWDOWN! We could probably bankrupt the place if we tried...

You gotta clue me in on what you create with the bacon butter. My experience was short lived because I had to leave town on business and forgot to freeze it... I made a grilled cheese and bacon in bacon butter and I also made chicken & broccoli with it. Filet mignon was another great use. Oh, and it made AWESOME garlic bread, without the garlic (I didnt want the garlic taste getting in the way).

I was told the time limit is longer. 15 minutes (the actual time limit) may be a bit short for me to eat the burger and 20 ounces (total) of fries and onion rings. It is a pet peeve of mine not to be rushed while eating , which is why I never did the competitive eating thing. I will take it down just for fun and if I happen do it in 15 minutes all the better...

There is definitely some great bacon talk on here but what drew me to comment was the mention of the Doomsday burger. Yes, the burger is 24 ounces and you must also eat an order of fries and onion rings in under 15 minutes. Of course it's possible but I do have to tell you that both times I've eaten there, the burger have been served at some thermo nuclear temperature that made me have to wait a bit for it to cool down. Let me know if you're going to try it, I'd like to witness it and I may join in.

If I go tomorrow it will be sometime around 2pm. Depends on what my friend wants to do...I am a fast eater by nature but I don't like to be rushed when I am eating which is why I never tried the competitive eating thing. I view food as something to be enjoyed, I just happen to be a pig.

Not yet. I tried to go last sunday but it was closed for a few days. According to the sign on the door it was scheduled to reopen this past tuesday - so I went to clarkes which makes a very good but to me slightly overcooked burger - my medium rare was more medium than I prefer. Hopefully 8oz has the full menu thing going now...
