Any tips on app's and entres? Dos or don'ts?

Brigtsen's - right now I'm leaning toward the duck for an entree, but am unsure about an appatizer

Commander's Palace - foie gras du monde, shrimp and tasso henican to start, then rack of lamb

K-Paul's - oysters pernod to start, then eggplant pirogue

Also, any suggestions on what to order at Cochon?
