        <content>Next to the Boyle Heights public swimming pool is a little market called La Princesta, which has, I swear, the world's worst tortelleria goods. Flavorless tostadas. Flour tortillas taste of acrid chemicals, like when I started baking and accidentally used 8x too much baking powder. Worse.
 
Sausages are flavorless and have no hint of pork.
 
Queso Oaxaca is dry, flavorless, and, melted, takes on the consistency of tar.
 
But, strangely, they have really great queso fresco. This is the crumbly farmer's cheese that you find sprinkled over the top of a lot of dishes. It's cheap, it has a very happy saline-cheesy quality, and it's fresher than hell. Beautiful, springy-crumbly, spongy texture. By far the best queso fresco I've had in town, and I'm a bit of an addict.
 
Kicks the hell out of all the brands that the Mexican markets in East HOllywood carry.
 
I've eaten it in hunks by itself. I've sprinkled it over black bean soup. I've eaten it on tostadas. I've sprinkled it over quesadillas. And I'm currently thinking of substituting it into saag paneer.
