How to make chili like Hard Times?
..or if you dont know hard times any other "famous" chili..
I make chili, and pretty much whatever I do, it comes out really GOOD...but also kind of generic...any tricks or tips that the pros use to make the chili EXCELLENT?
I'm not a chili pro. This may be heresy but:
In their online store they sell "seasoning packets" which are basically just a mix of various chili powders and peppers that they put into their chili in the restaurants. You still have to actually do the cooking and deal with the cut of beef (or whatever) and the grind and whatever else you do or don't want to add. I've found the seasonings to be really close to what they serve in the restaurants, though, and for me that's a really good thing.
If your goal is to eat chili like they serve at Hard Times, this can be a great way to go. If your goal is to figure out their seasonings and to engage in the process of working through that, then this might not be of any interest at all to you. Either way, good luck and have fun!
