        <content>Hi,
I'm looking to make some Spanish (i.e. not Mexican) chorizo.  I'm hoping to find a recipe where it gets cured for a certain amount of time, but not necessarily for a really long time in the hopes of eating it uncooked.  Ultimately, I would be cooking it.  Does anyone have any links or a recipe you use?  Thanks.

      <content>Whichever recipe/method you use, you want to make sure to flavor it with Spanish smoked paprika, and a fair amount of garlic, to give it that uniquely Spanish flavor.  </content>

      <content>I've made a homemade chorizo from one of the Two Hot Tamales' TV show.  I added some cayenne to taste.... we like it Hot! 

Here are the ingredients:
 Homemade Chorizo Ingredients
1 lb Ground pork butt  
1/2 bn Fresh oregano, chopped  
1 ts Coarse salt  
1 ts Ground coriander  
1 ts Freshly ground black pepper  
1 tb Ground cumin  
2 tb Ancho chile powder  
2 tb Vinegar  
4 Cloves garlic,, minced
