Celebrating National Pie Day today?

How often does national pie day fall on a rainy weekend...I'm inspired! I'm thinking of a spinach/feta pie, like spanakopita as a casserole not a sweet one.

My cupboard is full of dates, raisins, walnuts, almonds, chocolate and I'd love to be swayed /inspired with other ideas.

What kind of pie are you / would you make?

    I already planned on making a blue cheese & caramelized onion tart with dinner tonight, so I guess I'm all set. And I didn't even realize such a "holiday" existed.

    1. Gourmanda...sounds like you have the makings of a Toll House Pie, a big favourite with kids if you have any to satisfy.

      I hadn't realized that I was missing National Pie Day and am rushing out to amend that. I have been meaning to attempt a buttermilk pie with a cornmeal crust that we had in Louisville, Kentucky a while ago-NPD seems like the perfect excuse.

        I have a tree full of lemons...so I'm thinking lemon meringue is in order tonight.

          I make a kick ass banana creme pie..that's what I'll make tonight..

            1. Maybe a Banoffee pie. I've been promising the fam I'd make one for them since I moved back in (I've just finished college and started pastry school near my parents' house and am living with them and three of my younger siblings ages 12-19)

                Thank you SarahJay...I had forgotten about bonoffee pie...does your recipe call for 'cooking' a tin of condensed milk?

                  Wow never heard of it. That makes banana cream pie sound like health food! All I needed...one more excuse to eat toffee. :)

              2. Darn. I missed this post till today. Oh well. I'm making apple pie now. Better late than never.

                I'm using the recipe from Joy of Cooking. I'm not really a baker, but we'll see how it goes. I can follow a recipe and this cookbook has always done pretty well.
