Mushy Millet

I am having a millet problem. I cannot seem to get it to cook up fluffy; it always ends up a mushy mess. I have been cooking according to recommendations found on www.whfoods.org:

"After rinsing, add one part millet to two and a half parts boiling water or broth. After the liquid has returned to a boil, turn down the heat, cover and simmer for about 25 minutes. The texture of millet cooked this way will be fluffy like rice."

Any suggestions?

  1. that's too much liquid. use a 2:1 ratio of liquid to millet to keep it fluffy - any more liquid than that & it gets mushy.

      Yep I cook millet all the time - 2 to 1 max (sometimes less if there are wet things going in it). After rinsing it I toast it, so it is dry again and I like the flavor better, then add the water, bring to a boil and cook.

    2. Have you tried it in a pressure cooker? As others have said 2:1.
