A16 Trippa Alla Napoletana

I cooked this one up tonight and really enjoyed it, as did my guests. Anyone else ever made this or had a similar variation? The recipe is publish at the chef's consent at the following:

It's definitely not what most of my guests expected. They were skeptical, but they warmed up to it quickly.

      I bought it at May Wah on Clement, but I've also seen it at markets in the Mission. I made a fresh tagliatelle with white truffle oil.
