Okra. Love it!! But...

does anyone eat it RAW? I've eaten almost every other vegetable, except potatoes, raw and love to eat raw veggies with a tasty dip or salt & vinegar, but never heard of okra raw. Anyone?

    Yep, it's eaten raw. I personally prefer it pickled rather than raw, but it's good both ways. Raw it's particularly fond of vinegar, both for flavor and for keeping it from getting slimy. It's good as a crudité alone or along with dips, and great in salads. Okra, cucumber and celeriac make a great salad.

      Yes, I marinate diced okra with some rice wine vinegar, diced garlic, dissolved rock sugar, salt, and sesame oil.

      It's a great summertime dish.
