I wanna be a jerk
Roastin is upside down grilling - can do easy!
Here's a recipe I've used successfully:
3- 4 lb whole chicken or pieces
6 sliced scotch bonnet peppers (or other hot peppers)
2 Tbsp. thyme
2 Tbsp. ground allspice
8 Cloves garlic, finely chopped
3 Medium onions, finely chopped
2 Tbsp. sugar
2 Tbsp. salt
2 Tsp. ground black pepper
1 Tsp ground cinnamon
1 Tsp nutmeg
1 Tsp ginger
1/2 cup olive oil
1/2 cup soy sauce
Juice of one lime
1 cup orange juice
1 cup white vinegar
Chop the onions, garlic and peppers. Blend all of the ingredients except the chicken in a blender to make the jerk sauce.
If you have a whole chicken, quarter it now. Rub 2/3 of the sauce in to the meat, saving some for basting and dipping later. Refrigerate overnight to marinate.
Preheat oven to 350. Roast for 30 minutes, turn the meat over then roast an additional 30 minutes or until it temps 155. Remove, rest and serve with remaining sauce for dipping.
