Hey all -I cut up my duck today - and found this inside with the gizzards. I immediately thought it looked like liver, but have not seen this in the previous 2 ducks I've bought. Is this foie gras? Or what is it?
Looks like liver to me...but not foie gras per se, because it does not appear to have been specifically fattened.
It is duck foie gras. In fact, when I was in France, I realised that the French ate more duck foie gras than the goose variety. What did you do with your foie gras?
