Great rice dish to go with Chicken Marbella
I really like it wit cous cous (the small kind, not Israeli), with toasted almonds and currants or raisins and parsley. I would probably do something similar if I wanted rice. Saute onion or shallot, add a long grain or wild rice blend and saute for 1-2 minutes, add water or broth and cook. Stir in nuts, raisins, parsley, and maybe some lemon.
Oh my gosh my mom used to make this ALL the time when I was a kid but I haven't had it in YEARS!!! And actually have been craving it and wanting to try my own hand with it at home. It's a pretty innovative recipe for 30 years ago, if you ask me (and would fit in nicely with the "put dried fruit in everything savory" trend that has been going on with salads/stuffings/etc in recent years.
Anyway, I digress. We always had it at my house with rice pilaf, which my mother made from the Near East Boxed Pilaf mix. You could of course go more authentic with it - but I have to say, the box got the job done.
