Fast food quesadillas

Taco Bell has got it downPput the packed pre-grated cheese blend in the tortilla, maybe add cubed rubber chicken or steak, and there you are.What, probably five minutes from ordering to your mouth?Places like Jerry's Famous take a little longer, maybe 15 minutes, gotta plate the canned salsa, and guacamole mix.

I was in TJ for the Tequila Expo back in October and matched a family set up their kitchen and deliver a homemade quesadilla preparada within 15 minutes, not bad.

Now, why can't fast food chains do that?Nothing to it.

  1. deep fried quesadillas, thats a new one for me. i think, rightly or wrongly, that would be called a chimichanga here. interesting

      In Mexico, fillings are stuffed in raw masa and then they are deep fried or grilled on a comal.Cheese is sprinkled on top, the traditional fillings are huitlacoche, flor de calabaza,picadillo, tinga,etc.These are not chimichangas.We have these kinds of quesadillas here in LA, there is a place I go to on Breed St. in East LA that does it just like this booth in Tijuana.They are grilled or deep fried, made to order.Real quesadillas.

      American quesadillas are pre-made torillas with grated cheese, usually industrial grade.TB uses cheese product.

        thanks for the info... a year from now when i'm in LA I will have to go check it out. Not surprisingly anything here that involves a fried stuffed tortilla is called a chimichanga. Glad to know the difference.

      1. these sound and look like the huitlacoche quesadillas I had at Romesco. had it about a week after the huitlacoche quesadilla at El Borrego. both were very good but I preferred the one from El Borrego

          I wonder if they use fresh huitlacoche at those places?No one does in LA except Moles La Tia will soon be getting a source.But, most places I get it from here in LA use canned and it's still pretty damn good.This guy in TJ was using the real deal.Seems like Romesco would have no problem getting fresh huitlacoche I imagine.

          La Diferencia's huitlacoche crepes and chiles rellenos de huitlacoche are inspirational. Mole's La Tia in LA has a mole de huitlacoche!!!

            I had huitlacoche quesadillas quite some time ago at either Cien Anos or La Diferencia; first time for me. They were very good.
            I would be rather surprised if Romesco was not using fresh ingredients for theirs.
            No idea about El Borrego.
