Lemoncello Peels

I recently made Lemoncello, it was great. I kept my lemon peels from the process, how can I use them.

  1. I'd toss 'em in the compost heap. The process of steeping the peels in alcohol leaches out the flavoring oils from the peels. After floating for weeks in booze, the peels are dried out, almost white in color, and pretty useless.

      I agree. It's nice to be frugal and use things in a complete fashion instead of just tossing them aside... but now it is time to toss them. There's really no use for them unless you simply like to chew on them as an afternoon snack. Sounds kinda gross to me though. ;-)

    2. I'd taste one, as the others suggested, to see whether there's enough flavour. If there is, I'd puree them with some marmalade, add a shot of honey and glaze salmon with this, and bake.
