Grated beet salad
Recently, I found myself witha ton of beets. I had been roasting them, made soups, but was getting bored and my SO does not love them in salads. So I grated a raw peeled beet in the food processor with the grating disc in it, followed by a few carrots. I have tossed the mixture with mayo and then another time with olive oil, lemon juice. Even just a dab of mayo goes a long way. The salad has a wonderful crunch and a beautiful color. I have now been eating it every day at lunch. Do you have other grated beet salad ideas?

We, too, are up to our ears in beets. Have recently made a beet and grapefruit salad with a little olive oil and salt and pepper. Not a salad nor wholly successful, tonight I made stuck pot rice (and diced beets, chickpeas, carrots, persian currents, wilted onions, dried limes, saffron) with a pita bread crust.

Made a shaved beet salad a couple of years ago, but with beets that are roasted first.

grated beets, grated jicama, peanut-lime dressing. i thinly slice a red onion and leave it on the side if my husband is around- he loves red onions.

I make my own dressing, but there's no real recipe. I use peanut butter, lime juice, red pepper flakes, salt, toasted sesame oil, and a bit of hot water. I put the pb in a glass bowl in the micro for a few seconds to soften it, then whisk in a bit of hot water to thin out the pb. Whisk in the rest of the ingredients and taste. Sorry I can't give you exact amouts!
If you want something thicker and more of a dip, add very little water- just enough to make the peanut butter liquidy.

I make this too-- except that I usually use vinegar and a little bit of horseradish instead of lemon juice. Sometimes I also make "beet kinpira"-- shredded beets and carrots quickly sauteed with a little soy and mirin, then tossed with a few drops of sesame oil and some sesame seeds.
