where can i get duck legs plus fat/trimmings for rendering?

    1. The easy way, which is how I've been doing it, is to buy packages of duck legs at 99 Ranch (in trays of three each, for some reason) and get duck fat already rendered at Nicole's in South Pas. It's a schlepp, maybe, and not cheap (but about half the price of Monsieur Marcel's), but if you clarify and strain it between batches you can keep it in the fridge for just about eternity. And if you have no moral, dietary or religious reasons not to, you can make up any shortages with good lard (in bulk from the Latino markets).
