Half n Half

I have a whole half carton of half and half that expires in one day - any suggestions of what I could do with it today? Thanks.

  1. First off, don't take the expiration date as gospel truth. Sometimes dairy products go bad before their expiration date, sometimes they last for a long time after it. Taste the stuff and make sure it's good before you use it.

    My favorite way to use the stuff up is to make ice cream. Heat three parts of half-and-half with one part of sugar and some vanilla extract (or, better yet, scrapings from a vanilla bean), refrigerate for 8 hours or overnight, churn, and freeze until firm.

    If you don't have an ice cream maker, how about a cream soup or bisque? Homemade cream of mushroom is delicious on a chilly winter day. Shrimp bisque is quick, easy, and delicious.

      be sure and get the top really nicely deep golden brown. so delicious with a steak! (or at 6 a.m., heated as leftovers till crusty, seved with bacon and eggs (and a shot of sriracha).

      1. The fattier the dairy, the longer it lasts so dont worry too much. I agree with Alan that ice cream and soup are great ideas. I have always made alfredo with heavy cream but i wonder if you could do it with half and half, that might be a good way to use it up. quiche would be good too.

        1. I use 1/2-1/2 for coffee creamer, but you can make clam chowder with it.

          1. Homemade caramels or caramel sauce!
            Or follow alanbarnes lead and make homemade ice cream with half and caramel sauce with half...you'll be very popular!

              1. i'm a big, big fan of alkapal's suggestion of gratin. it's lovely made with potatoes, turnips, chayote, radishes

                other, low effort ways to use it: corn chowder, cream of tomato soup, hot chocolate, scrambled eggs

                also, if you bring it to a boil for a few minutes and return it to the fridge in a clean container, the cream will also last longer.

                1. A thick mushroom sauce (over pasta or rice), or chocolate pudding. Just not together.

                        You can freeze half&half. Best used in cooking after that, rather than coffee.

                        Rules vary by state, but in many states, the "sell by" date on the carton is a week or so before the "goes sour" date.

                        Killer hot chocolate: In a non-stick pan, over low heat, melt a teaspoon butter with 2 squares semi-sweet chocolate. When melted, slowly stir in 1 pint of half&half. When hot but NOT bubbly, remove from heat and add 1-2 teaspoons vanilla.

                        Optional: Add a shot of peppermint schnapps or Kahlua or brandy to this in a mug.

                        Do not share this with children. They do not deserve it. Do not drink this more than once a month. You'll croak.

                          Oh god, MJA...I am starting Weight Watchers on Monday. Your hot chocolate is now on my must list sometime in the next 40 hours it sounds soooooo good. Lucky, me I have some half-n-half in the fridge!

                        I've found that half-and-half lasts much longer than the date on the package - I agree with the other poster, fattier dairy always lasts longer.
