Half n Half

I have a whole half carton of half and half that expires in one day - any suggestions of what I could do with it today? Thanks.

  1. First off, don't take the expiration date as gospel truth. Sometimes dairy products go bad before their expiration date, sometimes they last for a long time after it. Taste the stuff and make sure it's good before you use it.

    My favorite way to use the stuff up is to make ice cream. Heat three parts of half-and-half with one part of sugar and some vanilla extract (or, better yet, scrapings from a vanilla bean), refrigerate for 8 hours or overnight, churn, and freeze until firm.

    If you don't have an ice cream maker, how about a cream soup or bisque? Homemade cream of mushroom is delicious on a chilly winter day. Shrimp bisque is quick, easy, and delicious.

      be sure and get the top really nicely deep golden brown. so delicious with a steak! (or at 6 a.m., heated as leftovers till crusty, seved with bacon and eggs (and a shot of sriracha).

      1. The fattier the dairy, the longer it lasts so dont worry too much. I agree with Alan that ice cream and soup are great ideas. I have always made alfredo with heavy cream but i wonder if you could do it with half and half, that might be a good way to use it up. quiche would be good too.

        1. I use 1/2-1/2 for coffee creamer, but you can make clam chowder with it.

          1. Homemade caramels or caramel sauce!
            Or follow alanbarnes lead and make homemade ice cream with half and caramel sauce with half...you'll be very popular!
